I’ve wanted better and healthier fast food and restaurant options for several years: a good portion of meat and some vegetables, cooked in a healthy fat; not too charred and without any PTFE, plastic or heavy metals in the cookware.

In May 2024 I started seriously considering the idea of starting something myself, and on the plane on a trip back from California in August I finally decided—having just eaten a seed-oil soaked chicken box and feeling the familiar mildly upset stomach from it—to start building something better.
